Ohmic Baking is an innovative baking process where bread can be baked in just a few minutes using short current pulses. In this bachelor thesis, the process of ohmic baking will be investigated in more detail. The focus lays on the mechanistic investigation of product-process interactions and the characterization of the ohmic baking process.
